Today is the day that we decided to do the first racking of the 2008 cabernet, it has completed it’s malolactic fermentation. We also made some adjustments for So2 and later will do the adjustment for acidity.

The wine has really come along way and looks, smells and tastes really nice considering it is only two months old. It is already showing signs of being an exceptional wine after it goes to bottle.
